The Rise of the Southern Biscuit. Elle est également l'auteur du livre The Biscuit Dive Guide.

My wife and I read about the Southern Belle Biscuit class on TripAdvisor and thought we’d give it a try since it was unique to the area and not your typical tourist thing. We’re glad we did! The location was a bit tough to find at the end unit of an industrial building, but when we got there the class was exactly as advertised on the web site. The instructor discussed biscuit making and made some, then served them with sausage gravy. Yum! Then she demonstrated a different technique and made cinnamon biscuits. Yum! Then it was time for the hands-on portion. No surprise that ours didn’t turn out exactly like hers, but they weren’t far off and they too were yummy! IMPORTANT: The only reason this isn’t a four star review is because the instructor said (more than once) that freezing a dough cloth killed the germs on it. As any web search will prove, that statement is factually inaccurate and could be dangerous if someone believed a freezer actually killed germs. That aside though, the class was different and fun, and we recommend it!

I'm glad you found the class refreshing and something more unique to do on your vacation. I do keep my pastry cloth in the freezer. at all times; except when I am baking. Freezing halts any bacteria growth. . I can see how you were confused..as I mention this in passing as I pull it out of the freezer when I bake in class. freezing food with bacteria does not kill it.. it will be there when the food is thawed and continue to grow. I certainly don't meant to imply that. I'm not an expert on these things.. I just know that putting my pastry cloth in my freezer is better than leaving out at room temperature all the time. . Thank you for coming to biscuit class and I know if you make them a few more times they will be wonderful. :)

This class was fun, informative, and yummy. Maryann is a fantastic and entertaining instructor. The class was the highlight of my Nashville vacation. The only reason for the rating of 4 rather than 5 is that unlike any other baking or cooking class I’ve taken, we did not leave with recipes, free or for sale. Plus, the time management at the end left my group with over baked (but still delicious) biscuits. Take the class and take notes!!!

Glad you enjoyed class. And you left knowing how to bake a biscuit..and that is what anyone taking the class is paying for. I do serve extra things that are a bonus for my guests.. I get in the mood to make different gravies and toppings that I create as a gift and to make things fun. Those recipes are not part of the lesson paid for. I do that freely as I teach.how to bake a classic Southern biscuit. The biscuit recipe is shared. I don't think you are alone; a lot of people taking my class want a recipe handed to them. I don't give out handouts. Why? Those are left, lost ..and most will write me later wanting me to send it again. When the student does the work to learn and remember in their way, they are more likely to truly learn. As for the biscuit recipe taught in class? It is easily committed to memory or one can take notes, I also tell everyone that they can take a photograph of the back of my bag of flour.; .as he recipe and steps taught in class are listed right there.
