We went on the 2.30pm Dolphin Watching Tour, having booked online a few weeks before our visit. It was a bit of a shot in the dark choosing Tropics Boat Tours out of all the tours offered but it turned out to have been a great choice!
The boat has 2 passenger decks, each with a bar selling beer, wine, vodka punch, and soft drinks. There is an option to purchase a wristband ($10) for unlimited drinks before leaving. Each group is photographed when you board and the photos are offered for purchase later in the trip - nice touch to see them while still on the boat. There is plenty of seating and space for everyone to move around. There is only one rest room on board though so there tended to be a queue - especially for those wearing wristbands!
The crew were very friendly, and always willing to chat and share their knowledge of the area and the dolphins. After cruising away from the beach and out into deeper water about a dozen or so dolphins were spotted and we spent about 30-40 minutes circling around while they played in the boat's wake and slightly further out. There was plenty of opportunity for photos, video or just watching the dolphins playing. Once they seemed to tire of the boat, the crew did the decent thing and left the dolphins in peace while we continued on what was now a sightseeing tour.
During the return to the pier the crew fed the seagulls, letting the kids join in if they wanted. All the kids were also given a 'Dolphin Spotter' certificate.
