First off, go on this trip hungry.
Secondly, book this early in your trip. You'll learn all the good spots to go while you're visiting the island. This is good for two reasons.
1) You'll learn that some of the spots you already made reservations for aren't as good as these places.
2) You'll discover places that have great food that aren't exactly easy to find. A great example of this was this was Maka Sushi. It rated in the top 100 eateries in America! By the way, the Gorilla Poke Bowl was worth more than what you'd pay for at most places.
Anyway, back to the tour. We did a tour of the South Shore. There was a crazy amount of good food with a good variety. We had jams, Poke bowls, acai bowls, Gelato, kambuhca juices and molecular-gastronomicaly engineered burger. Also, the people who conduct these tours really care about the people that are on them and the employees/owners that run the businesses you'll visit. Also, on top of giving you free food they also sometimes give you discounts on stuff you may want to purchase while you're there.
