This tasting was absolutely stunning, from start to finish, and Virginia is a total treasure.
Let's paint a picture: an idyllic rocky coastline in Maine at the heart of a small community, stepping inside a cozy, sunny tasting room at Maine Oyster Company. The sun was shining through during its golden hour, fresh flowers were picked, the settings were picturesque, and the room was lined with windows on all sides to look out over the water.
Only 3 of us were there, so we essentially had a private tasting. It was a windy day, so we popped up to the roof for a champagne toast and 360 view before returning to the tasting room for the tasting itself.
Virginia and her husband Warwick were a trove of information and insight. As we went through the tasting (featuring 3 farms, 4 oysters from each), Virginia took us through every vibrant detail. We each had maps of the coast where we marked the spot of each farm and why its waters were good for oysters; booklets where we could write down oyster types and flavors; and a brand new oyster flavor wheel, which is just about as nuanced as wine. We even got a lesson in shucking.
Speaking of wine, each pairing was perfectly complementary. Even the homemade mignonette and Lady Oyster hatch chili sauce were fantastic (and available online!).
And my god... the focaccia. (Not available online :/)
Would 100% do this tasting again. Virginia knows her craft well - everything from the oyster within its shell to the environment that produced it.
