Real olive oil--not the stuff mixed with vegetable oils in plastic bottles--is a real treat when you conduct a tasting that treats oil like fine wines. See, swirl, sniff, sip, and savor brought the flavors to life. Our guide Trey expertly explained the differences between the oils we tasted to our group on a weekday morning. Exotic flavors like harissa, basil, Sicilian, and blood orange were great on their own, but combined with the amazing array of balsamic vinegars and then sampling them with bread, parmesan cheese, marcona almonds, dark chocolate, and even ice cream made for a superbly tasty and educational experience. They shared recipes, ideas for using the oils and vinegars, and a conversion chart for substituting oil for butter in recipes. The shop has two sizes of bottles for purchase, as well as accessories for serving. There's a restaurant that serves fresh, seasonal, farm-to-table food that showcases their products at their best. Reservations are necessary for groups. Weekends are busy, but don't miss this gem when visiting Dripping Springs. Their award winning oils and vinegars are worth the trip!
