C'est une cave de caractère et a été la première cave construite sur De Portola Road dans les années 1970. Pour les visites de 11h et 11h45, nous essayons toujours d'organiser une mini visite de production afin que nos clients puissent en apprendre un peu plus sur le processus de vinification et les différentes fermentations que traverse le vin entre des cuves en acier inoxydable et des fûts de chêne.

Someset est unique car c'est le seul domaine viticole du sud de la Californie (et l'un des 8 seuls domaines viticoles aux États-Unis) qui produit du vin selon l'ancien processus de terre cuite qui a commencé en Perse il y a plus de 8 000 ans. Le processus implique une fermentation dans de grands récipients en argile, ce qui évite de produire des tanins à partir des fûts de chêne traditionnels et donne au vin un goût plus naturel.
