I was really looking forward to this experience and was not disappointed. Austin was our chef for the session and was brilliant - lots of Southern charm & wit, not to mention experience in the kitchen.
Austin showed us in detail how to make gumbo, jambalaya and pralines - he spent a good amount of time to go through some of the important details such as preparing a roux, which spices to use, the benefit of dried garlic (!) etc. It was all really interesting and great to see it being made in real time and served to us.
The group was a reasonable size that allowed for some discussion, Q&A and general banter, which was great - there were people there from all over the world (including us).
We got recipes to keep for what was made, plus if you give it a go at home and sent the photos into Austin you get a certificate :-)
During the session there was water, lemonade and iced tea provided, plus there were beers available when the meal was ready.
In all this was a great experience, and one that lasted about 2 and a half hours. There is also a shop on site where you can get some discount against cooking school packs, plus there are lots of other interesting things to check out and buy.
I would recommend this to anyone visiting New Orleans !
