I always love it when people take both tours and I'm even happier to hear you enjoyed both! I agree, there is very little overlap between the two, it really depends on which neighborhood and time period of history you are most interested in. "Sip and Savor" is the Plaza neighborhood (more touristy), and we cover all of Santa Fe's history over four hours. "Off the Beaten Path" is the Railyard neighborhood (more of a local's hangout), and we focus on the arrival of the railroad in 1880 and how drastically that event shaped the Santa Fe that we know today.
Both tours fantastic, and I think portion sizes really does depend on the day. I always tell people to have a big brunch the day of the tour, and to show up to the tour ready to eat but not starving. Most people will find the tour functions as a lunch replacement, and they like to have something light for dinner afterwards.
