We did the hands-on roux class with Teresa. My boyfriend & I were enrolled, as well as 5 other people. Our recipes for the day were gumbo, shrimp etouffee, and bananas foster. We took the ferry there ($2 exact change, very easy to find, part of the fun of the experience – great views on the ferry! Everyone had their cameras out) & then we Ubered back to our hotel after class (we were in a food coma & needed a nap!). I absolutely love taking cooking classes when we visit different cities, but we’ve taken classes with varying degrees of quality over the years – some amazing, some a big waste of money. I HATE classes where not everyone gets to participate in tasks, or everyone is split into large groups and you have to take turns stirring something with 7 other people.. Not my idea of a hands-on class. This class was totally different! We all got our own cutting board and knife, and while we worked as a team and it was a group effort to complete the dish, we all got to participate in every step of each recipe. There were multiple portable stoves, so everyone got a turn browning the roux to just the right color for that recipe. There was plenty of space for all of us, despite being in a home kitchen. Everything was set up, well-prepared, and Teresa’s assistant was there taking care of the odds & ends.. As well as constantly refilling our wine glasses! I consider myself a pretty experienced, knowledgeable cook, yet I learned so many new skills and techniques during this class! Even just the way Teresa chops certain vegetables! Plus, learning roux is a skill that can be applied to so many different types of food. In contrast, my boyfriend has little skill in the kitchen, but nothing was above him in this class. Teresa did an excellent job teach to all of our levels. Several of the other people in the class said they don’t ever cook, and they enjoyed every bit of the class as well. On our trip, I also took a cooking demo with a different company before we did this cooking class (had a morning to kill while my boyfriend fished) – it was with the New Orleans School of Cooking. That’s the most reviewed cooking activity on TripAdvisor (possibly because it’s in the middle of the French Quarter, they’ve been around for decades, and they do multiple large classes everyday). For anyone trying to decide between this and them, I can give my opinion having done both. The demo with the New Orleans School of Cooking was entertaining, but I felt like it was more about the entertainment instead of the food. The demo was a huge room with LOTS of people & there were many bad seats if you got unlucky. You just sit there while a man cooks and talks at you. Many of the steps in the recipe were left out because the guy doing the demo was on a roll telling one of his stories – there’s no way I could recreate one of the recipes watching that. I left the demo still hungry, where with Mardi Gras School of Cooking we were SO STUFFED (and full of wine & dessert!) we could barely go to dinner that night. The gumbo we made with Teresa was so much tastier than what I had for the demo, as well. It was TOTALLY worth doing the hands-on personal class. The demo I did with the other company was fine, but our time in this cooking class will be a lasting memory. I have one other thing to note because it’s something that concerned me when I was reading reviews before our trip & trying to decide which company to book with: Some of the older reviews state the male instructor smoked in the home during the class. I am extremely sensitive to smoke, so that was almost a deal-breaker for me. Teresa told us that man (the founder of the company, I believe) is no longer with us, so the smoking is no longer a relevant issue. There was no sign of cigarette smoke, and Teresa’s home was perfectly clean and beautiful. So anyone who reads the smoking thing in older reviews, know it’s no longer a concern.
