A Day Away Kayak tours used to do launch tours, but since a launch cannot be guaranteed (they often scrub due to conditions) they stopped offering this. However, we were able to book a private Comb Jelly Bio-luminescence Kayak tour at 6am (for a 6:30 launch). Jess (our guide) was amazing, and kept in touch with us all the way up to our meeting time. She even helped me arrange a hidden fourth person on the tour since my parents didn't know my sister was flying in to join us, so we were able to surprise them!
Jess offered to meet us at the beach at 5:30am, and when we got there (early, at 5am) the Kayaks were already in the water and everything was ready to go! We had a quick kayak lesson (though we were all experienced so we got the very-short version so we could get out on the water faster). This allowed us plenty of time to go down the channel in the dark, which is an incredible experience on its own! If you're looking for jellies I'd say go when it's colder, as it was actually a pretty warm morning and we didn't see a lot. (When we'd previously gone in Feb it was very chilly and there were tons!) There were some out though, which is magical to see in the water when it's still reflecting stars.
At the end of the channel there are some rocks and some trees so we found places to 'anchor,' and were lucky because our launch wasn't scrubbed and we could see the first time the Starliner was sent into orbit! It was an amazing experience, and it wouldn't have been possible without A Day Away.
As a note--the closer you get to the ocean, and in parts of the channel, the water can be very choppy and you will be fighting the wind. It's possible to manage this even if you've never Kayaked before, but I'd recommend being in decent physical condition and if you have some experience it really does help. I believe the guides would tailor it for the less experienced, though, as there is plenty of calm water to test out in.
