My husband and I took the Roux class yesterday with Chef Chris. Everything about the experience was fantastic!
We had a full class - 9 people (the max was 10) and Chris made sure everyone got to cook and was engaged in the process, the storytelling, etc. We had a range of ages and skill levels and everyone was encouraged to participate and learn new skills. Chris also told some great stories about the food and history of the dishes, as well as some of his experiences cooking in New Orleans and around the world! He made it very easy to feel comfortable and engaged.
We started with everyone chopping ingredients, and then got to making the roux for our gumbo. While the gumbo cooked, we made the shrimp étouffée. I’m not a shrimp fan, but the flavors were wonderful and my husband enjoyed my serving of shrimp!
Once we were done with the main courses it was time for bananas foster. My husband got to do most of the cooking for the bananas foster. He does not cook, but Chris walked him through it and it turned out great! Everyone participated, sat around the table talking and eating and enjoying ourselves, and had a great time. After class, we were all emailed the recipes so we can try and replicate our new dishes at home.
This class was truly something for everyone. I love to cook and enjoyed it, but my husband who really doesn’t cook also loved it. He felt included and like he was able to learn and participate despite being a cooking novice. I can’t wait to get home and try out the recipes again, and then come back to New Orleans and take another class!
