Enjoyed this experience! Would do again when visiting NOLA! Mark was fun and informative. We learned not to toss out shrimp or lobster shells. We will be making our own shrimp stock from now on. Mark showed us "tricks of the trade" in cooking delicious Cajun dishes using the simple to make stock. After cooking crab and corn bisque, Cajun shrimp and rice, along with a glass of wine , we enjoyed an over the top meal fit for Mardi Gras kings and queens. Hard to keep our hands off of the pralines later that evening.
