Nous sommes la seule école de cuisine qui organise de petits cours pratiques intimes dans le quartier français. La taille de nos classes varie de 2 à 10 personnes. Les groupes plus importants sont également les bienvenus. Les cours ressemblent plus à un dîner entre amis.

I was surprised at how much I learned in the class which was the Roux Class. The instructor was Chef Preston and he was an excellent instructor. He was competent, personable and a very skilled/seasoned chef. His presentation skills and people skills were excellent. We made a roux, which I have been spending to much time making in the past. Then used the roux to make gumbo and étouffée. Dessert was bananas fosters. Everything was excellent. Better than restaurants in french quarter. I dont know why I chose this class over others in the area but I am glad I did. Highly recommend it. Thanks Chef Preston and my family will thank you next time I cook gumbo.

My son and I booked the roux class on a whim and at the last minute. It turned out to be one of the highlights of our trip. The chef was knowledgeable, informative, and entertaining. We can't wait to show off what we learned. There is no substitute for hands-on training. I would highly recommend this school and we plan to take another class when we are fortunate enough to visit New Orleans in the future.

We chose for the 'roux' class mainly because it included making etouffee, which my wife really likes, as well as gumbo. Our instructor, Laurent, was outstanding. We learned a few tricks and got samples of Beignet made by another chef, while we made chicken and andouille gumbo, shrimp etouffee, and bananas Foster. Each dish was very enjoyable, and even though we finished by about 1:30, neither of us had any room for dinner so we saved the cost of eating out twice. Really, the dishes were rich and the portions we ate amounted to two lunches plus dessert. We walked around afterwards for hours but were still stuffed...so we learned a bit about Cajun and Creole cooking and ate the equivalent of two meals for the price of a cooking class. I believe everyone in our group of six chefs-in-training enjoyed the experience, the instruction, and the food.
