We attended the Mardi Grad School of Cooking recently and loved it! Chef Mark was a great teacher. We learned how to properly make a Roux (both oil and butter based), Shrimp Etouffee, Andouille Sausage & Chicken Gumbo and Banana's Foster. I can honestly say it is the best I have ever eaten. We took notes but the recipes provided and the techniques learned are top-notch. We have already made the Shrimp Etouffee on our own and were very pleased with it. I cannot recommend the Mardi Grad School of Cooking and Chef Mark more. Thanks so much for a great evening and our new cooking skills!!
