This class is a must for travelers who want to leave New Orleans with more than a memory of roux on their lips and extra pounds on their hips. Chef Mark taught us the techniques of whipping out incomparable remoulade, blanc beurre, and praline sauces, and seasoned them with historical context and funny stories. Then we sat down and ate what was probably the best meal we had during our whole trip. The atmosphere was casual, no stress, and focused on fun and serious mastery of the tasks at hand. Others in the class were kindred foodies and we all enjoyed sharing tips and tricks about cooking. GREAT experience! I can't wait to take more classes.The only thing missing from this scrumptious experience was a doggy bag of leftovers to gorge for a midnight snack.
