Learn the nuances of Cajun cooking in this class. Cam taught us lots of tricks to build flavor. He shared his knowledge of cooking and the local area with us. Cam went above and beyond to make sure our experience in New Orleans was wonderful.

I would highly recommend the Cajun roux class. Chef Cam was an excellent teacher being both very knowledgeable and personable. The food we made was absolutely delicious! We had shrimp etouffee, chicken and andouille sausage gumbo, and bananas foster.

Chef Raymond was an excellent teacher of Louisiana food history and culture. We took the roux class, and the gumbo was hands-down the best meal we had all weekend. Can't wait to try the recipes at home. Highly recommend!
